Mexican Tortillas
INGREDIENTS:
225g (8 oz) minced beef
1 small onion, finely chopped
1 chilli, deseeded and finely chopped
Salt and freshly ground black pepper
4 tortillas
To serve:
Sour cream or crème fraîche
Guacamole
Makes 4.
Turn up the cooker control and fry the minced beef on a high heat in a non-stick frying pan, add the onion, chilli and seasoning. Stir until the beef is cooked and browned.
Meanwhile, heat the tortillas in either the Main Oven or on the simmering side of the hotplate. Assemble by dividing the meat mixture between the warmed tortillas, then add a blob of sour cream. Fold over or roll up into a 'wrap' and serve with the guacamole.
