Flemish Beef Casserole

Serves 4

60g (2 ¼ oz) butter
5 Onions, Sliced
800g (1 ¾ lb) Chuck/Braising/Stewing Steak
115g (4oz) Kidney
115g (4oz) Liver
300ml (1/2 pint) dark beer
1 slice of bread spread with mustard
1 piece of dark unsweetened chocolate

 

Method
Melt the butter and fry the onions until lightly browned, remove from the pan and reserve.  Cut the meats into 2 ½ cm (1 inch) cubes and fry until brown.  Place the onions and meats into a casserole, pour over the beer and add the slice of bread and the chocolate. 

Hotplate
Bring to the boil then transfer to the Main Oven.

 

Main Oven 140ºC (275ºF),Gas Mark 1
Place on the grid shelf on the fourth set of runners down and cook for about 3 hours.
